Chia Pudding
An easy, go-to breakfast for busy people. I present you: chia seeds! You can soak them in milk, or almond milk, or soya milk, or... follow my example for the tastiest start of the day.
You will need:
Chia seeds
Coconut yoghurt/cream
Maple syrup
Fruit (optional, but makes your pudding taste so much better, since chia seeds don't really have a taste of their own)

Put some fruit in the container where you will be preparing your pudding, I use glass cups with lids, so I can ration them easier and just grab one in the morning.
Add a spoonful of chia seeds per cup.
Fill up with coconut yoghurt/cream.
Sweeten to taste with a sweetener of your choice. I prefer maple syrup.
Stir well. Make sure there are no random clumps of chia seeds.
Cover and refrigerate overnight or at least 3 hours. It will keep for up to 4 days in the fridge (also depending of what kind of fruit you are using), so you can prepare a batch in advance.
